Summary of Responsibilities :
To have complete knowledge on the food, beverage, service available in the hotel
Monitor and ensure smooth operations of F&B Outlets and banquets
Effective participation in coordinating and controlling departments
Conducts regular tours (walk) of front and back of F&B operations to check on set-up / service / F&B quality / general maintenance / cleanliness
Recommends improvements in all aspects of F&B outlets. Keep updated on new technology to improve work efficiency
Have full knowledge of all menus and promotions
Coordinate with Executive Chef & Outlet Managers on the set up, implementation and sales of all outlet promotions and menu planning
Participate in effective staff management (hiring, termination, transfer, overtime, casual labour)
Revıew weekly staff rosters ensurıng Raffles qualıty standards wıll be met accordıngly
Enforce staff motivation and team building
Observes staff individual performance / grooming / punctuality
Ensure that the staff are equipped with proper working environment / tools / knowledge to enable them to be productive and efficient in their work
Ensure application of procedures and regulations to staff concerning hygiene (HACCP) / fire and life safety / emergency procedures
Maintains regular customer contact to obtain feedback / create future clıents
Proper and tactful handling of verbal complaints from Residents / Patrons and responds appropriately
Conduct / attend F&B meetings (briefings) as required
Ensure smooth and effective communication between F&B and other departments in the hotel
Meeting regularly with key suppliers to discuss new products, flaws in existing products, maximize discounts, sponsorships
Ensure that quality of food, beverage, service provided are consistently maintained
Assist Director of Food and Beverage; in planning of budget / forecast / CAPEX / P&L and ın any other relevant projects assıgned by Director of Food and Beverage
Implement appropriate and effective measures to improve control of costs, expenses, labour
Previous Food and Beverage leadership experience required
Oral and written fluency in Polish and Englısh
Previous Point of Sale system experience required
Computer literate in Microsoft Windows applications required
University / College degree in a related discipline preferred
Excellent communication and organizational skills
Strong interpersonal and problem solving abilities
Highly responsible & reliable
Ability to work well under pressure in a fast paced environment
Ability to work cohesively as part of a team
Ability to focus attention on guest needs, remaining calm and courteous at all times
